Our Dough: 11 Years of Pizza Obsession
We’ve been on a journey—from a street food stall in East London to some of the best pizza restaurants in London. And it all starts with one thing: our dough.
We’ve tested hundreds of recipes, flours, and techniques over the last 11 years to perfect our signature Neapolitan pizza base. After all that testing (and tasting), we chose to work with the legendary Molino Dalla Giovanna, whose flour is used by the No.1 restaurant in the world—Osteria Francescana.
Our dough is a mix of just 5 ingredients: flour, water, yeast, and salt. The 5th ingredient? Time. We prove our dough for 48–72 hours to give it that signature light, airy texture and beautiful leopard-spotted crust—then cook it in our custom Neapolitan pizza ovens until it’s crisp, chewy, and irresistible.
Sauce & Toppings: Straight Outta Italy (and the UK too)
For our sauce, we head south—San Marzano tomatoes from Naples, blitzed fresh with just sea salt and olive oil. That’s it. No fuss. No weird stuff. Just real tomato flavour the way it’s done in Naples.
On top, we layer the creamiest fior di latte mozzarella, straight from Campania, and finish every pizza with a hit of fresh basil. From there? It’s all up to you.

Say Hello to Bomba Doughnuts
What’s a Bomba doughnut, you ask? Think classic doughnut, but lighter, crispier, and way more exciting.
We make our enriched bomba dough fresh every day using flour, eggs, milk, and
butter—then let it rise sloooowly for 24 hours. That’s what gives it that airy, dreamy texture when you bite in.
Then comes the fun part.
Savoury Bombas (Yes, really.)
We’ve taken the traditional sweet bomba and turned it on its head. Feast your eyes (and
mouths) on these bad boys:
Lasagne Bomba – stuffed with rich bolognese ragù, topped with creamy béchamel and parmesan
Blue Cheese Bomba – oozing with gorgonzola béchamel and parmesan, topped with sweet, spicy scotch bonnet hot honey
Nduja Bomba – fiery nduja and mascarpone blend inside, finished with nduja sugar for that spicy-sweet hit
