Just in time for St Patrick’s Day, Crust Bros has teamed up with modern Irish restaurant and bar Daffodil Mulligan to launch a bold new limited-edition pizza that celebrates Irish flavour in a completely new way.
Available from 9th March 2026, the Guinness Rarebit & Sugar Pit Cured Bacon Pizza brings together the expertise of two brands known for their passion for flavour, provenance, and craftsmanship.
This collaboration sees Crust Bros reinterpret the bold cooking style of Daffodil Mulligan through the lens of their award-winning Neapolitan pizza, resulting in a rich, indulgent pizza that blends Irish culinary heritage with traditional Italian technique.

A Celebration of Irish Flavour on a Neapolitan Pizza in London
Daffodil Mulligan, led by celebrated chef and restaurateur Richard Corrigan, is known for its fire-led cooking and deep respect for Irish ingredients. Located near Old Street, the restaurant has built a reputation for vibrant dishes that showcase the very best produce from Ireland and the UK.
For this collaboration, Crust Bros took inspiration from Daffodil Mulligan’s signature flavour profiles to create something entirely new: a pizza that captures the comforting richness of classic Irish cooking while maintaining the light, airy texture of a traditional Neapolitan base.
The result is a pizza that feels both indulgent and balanced, bold in flavour but crafted with the care and technique both restaurants are known for.

At the heart of the collaboration is the Guinness Rarebit & Sugar Pit Cured Bacon Pizza, a standout creation designed to deliver deep flavour in every bite.
The pizza begins with Crust Bros’ freshly prepared dough, made in-house daily and baked in their signature style to achieve the brand’s iconic charred leopard-print crust.
Instead of a traditional tomato base, the pizza features a rich Guinness Rarebit sauce, delivering a velvety, savoury depth that forms the foundation of the dish.
Layered on top is sugar pit cured bacon from renowned Irish butcher Peter Hannan, whose exceptional produce is also supplied to Fortnum & Mason. The bacon adds a smoky richness that perfectly complements the rarebit base.
The pizza is then finished with:
Fresh spring onions and chives for brightness
A drizzle of Guinness BBQ sauce for a smoky-sweet lift
Shaved Coolea cheese, bringing a nutty, creamy finish

Led by Head Chef Fiona Hannon, who has worked alongside Richard Corrigan for over two decades, the restaurant celebrates traditional Irish produce through dishes cooked over fire from sugar pit pork and wood-fired chicken to dry-aged beef and whole roasted fish.

For every Guinness Rarebit pizza sold, £1 will be donated to the Irish Youth Foundation, a charity that supports vulnerable young people across Ireland. Richard Corrigan serves as a Patron of the foundation, making this partnership even more meaningful.
