We don't do things by halves at Crust Bros. When we team up, we go all in and our latest special with the legends at Cavita is exactly that. Meet the Birria Beef Pizza: a bold, messy, outrageously good limited-edition drop that's available right now at both our Waterloo and Covent Garden restaurants.

The Inside Scoop: Crust Bros x Cavita
Who Are Cavita?
Cavita is one of London's most celebrated Mexican restaurants, nestled in Marylebone on Wigmore Street. Led by chef Adriana Cavita, they're known for their deep respect for authentic Mexican cuisine from slow-cooked moles to elevated street food dishes. When we started talking about a collaboration, we knew it had to be something special, something that would put both teams' expertise front and centre. Birria was the obvious answer.

What Is Birria?
Birria is a traditional Mexican dish, slow-cooked, deeply spiced braised meat that's rich, tender, and packed with flavour. Originating from Jalisco, it's become a global street food obsession, and for good reason. The slow-cook process creates layers of flavour that are genuinely hard to beat. Cavita has been serving their own take on birria-style dishes for years, so when it came to building this pizza together, we were in very safe hands.
What's on the Pizza? Let's Break It Down
The Base
It all starts the Crust Bros way: freshly made dough, proved for 48–72 hours to get that signature airy, fluffy texture — then fired at 500°C for that charred leopard print crust. On top of that dough goes a rich birria beef gravy base that soaks straight in and sets the tone for everything that follows.
The Toppings
This is where it gets serious. The pizza is loaded with slow-cooked birria meat which is tender, deeply seasoned, and piled high. That's layered with smoked mozzarella and parmesan, which melt into the gravy base to create something properly indulgent.
The Finishing Touches
We couldn't stop at the cheese. Three salsas finish the pizza and each one earns its place:
Pineapple pico de gallo — juicy, fresh, and just a little sweet to cut through the richness
Avocado salsa — creamy and smooth, the perfect counter to the heat
Habanero salsa — punchy, fiery, and not for the faint-hearted
The Dipping Sauce
And yes, there's a pot of birria sauce on the side for dipping those crusts. Because if you're going to do birria, you do it properly.
